Ingredients
- 1½ cups heavy cream 341 grams, divided
- 12 ounces chopped white chocolate 340 grams (see note)
- Mini chocolate chips optional, for topping

Instructions
- In a small saucepan, heat ¾ cup of the cream on medium heat. The cream should get hot and slightly bubbly on the edges, but do not bring it to a boil.1½ cups heavy cream
- Turn off the heat and add the chocolate. Stir until the chocolate is melted and the cream and chocolate are completely combined. Set aside and allow to cool to room temperature.12 ounces chopped white chocolate
- With a hand mixer, beat the other ¾ cup of cream on high until soft peaks form. Once the chocolate mixture is cool, gently fold it into the whipped cream using a rubber spatula.
- Serve cold topped with mini chocolate chips if desired (its yummy that way!).Mini chocolate chips

Hi Janet, it sounds like you overmixed the mousse. This is a pretty common mistake and totally fixable! It’s important to gently fold the whipped cream into the white chocolate mixture– those stiff peaks are what keep the mousse light and fluffy, and it’s easy for them to deflate and turn back into pudding. You can whip some more cream and gently stir it into the mousse to fix this issue!
Hello! I am wanting to make a bigger serving for finger food for a party, but when I change the serving amounts the chocolate is not changing when I select a higher amount of servings?
