I don’t know about you guys, but my Facebook feed is full of back to school cuteness right now. All the kiddos are ready to meet their teachers, their new friends, and leave mom and dad bored to tears at home. I know when I was in school, one of the best parts about school was coming home to an after school snack. You guys know my mom is an INCREDIBLE cook, so our afternoons were always delicious.
We don’t have kids yet, but I already look forward to carrying on the tradition of delicious after school treats. Whether its a Salted Caramel Cookie, Peanut Butter No Bake Energy Bites, or these Lemon Strawberry Shortcake Cups, kids (and adults!) should have something yummy to look forward to. These Otis Spunkmeyer Lemon Strawberry Shortcake Cups are the perfect SUPER EASY sweet treat!

How to Make Strawberry Shortcake Cups
This lemon strawberry shortcake cups recipe is as easy as can be. Dessert has never been so quick and simple! I love that you can whip these up on short notice, or even serve them as an indulgent snack. Layer in these delightful ingredients and you’re ready to eat!
- Chop the loaf cakes into bite-sized pieces.
- Slice the strawberries, then mix them with the sugar in a mixing bowl. Let them sit to macerate for about 5 minutes.
- Whip together the Cool Whip, melted chocolate, powdered sugar, and vanilla extract.
- Place a layer of the loaf cake pieces on the bottom of the cups/bowls (use about 1/4 of the pieces).
- Layer on 1/4 of the strawberry mixture, and then 1/4 of the whipped cream mixture.
- Repeat the layering process with another 1/4 of each mixture.
This recipe makes two double-layered strawberry shortcake cups, or four single-layer servings if you want something smaller (but trust me, you want the bigger version).
There’s just something about simple flavors coming together to create perfection. Lemon, strawberry, and cream are a serious match made in heaven. I ate one of these right away and have the others stored in my fridge for tomorrow…or for later today. That’s actually more likely. SO YUM! Happy back to school everyone!
