Mini Apricot Brie Bites
Appetizers, as you know, are my favorites! They’re easy to serve, eat, and the possibilities are endless. I once made these cute little appetizers for a wine party and I just loved them. The sweet apricots mixed with the brie and arugala…such a great flavor combo!
This is such a tasty appetizer for a New Year’s Eve party! Pair with your favorite white wine for a fancy get together!
What Are Some Other Toppings for Brie Bites?
Not a huge fans of apricots? Don’t worry, you can top these little bites with just about anything! Here are some of my favorites:

strawberries
blackberries
jam
raspberries
kiwi
cranberry
peaches
Can Brie Cheese Be Reheated?
These simple mini brie bites can be served hot or cold. To re-heat, simply microwave for just a few seconds until heated through. The texture won’t be as creamy as when it was first baked, but they’ll still taste divine!
What Kind of Crackers Are Best for Baked Brie Bites?
I used some mini toasts that I got at World Market (my fave ever store!), but you could also toast your own bread and cut into fourths. This is such an easy and versatile recipe, you will love it!

20mini toastsor 5 pieces of bread, toasted and cut into 1/4s
1package of briecut into 20 small pieces
20leavesof baby arugula
apricot jelly
Instructions
Preheat oven to 350 degrees
Drain the apricots and cut each half in half again. You should have about 16-20 piece of apricot. If there aren't enough in the can, just cut a few into smaller pieces to make 20 small pieces.
Assemble each appetizer by spreading apricot jelly on each toast, topping with brie, then arugula, then a piece of apricot. Hold together with a toothpick. Place each on a parchment lined baking sheet.
Bake for 7-10 minutes, or until brie begins to melt.
