Santa Fe Chicken Bites are the perfect cheesy appetizer for any occasion! These bite sized chicken appetizers are loaded with everything that makes Mexican food great and topped with sour cream and cilantro. YUM!
On this journey to learn how to cook, one of my favorite things I’ve learned is how to balance flavor combinations. It’s fun to play around with ingredients that might not necessarily be paired together, and make them taste delicious! Creativity in the kitchen can almost be a form of therapy. Nothing better than trying something outside of the box, and having it be a big hit.
These Santa Fe Chicken Bites are a small, pop-able, surprise favorite at our house.
Super easy to make, and gone in a flash. Perfect for any occasion!
The secret ingredient that might be a surprise?? Couscous. I know, strange. But somehow perfect. I’m pretty proud of these little bad boys!
I can’t really take credit for the creativity of this flavor combination. It came to me because of a super fun contest (that you should totally enter too!) inspired by the TV Show, Chopped! Sargento® is hosting a “Chopped At Home” Challenge and the winner will win $10,000!!! The rules are simple…create a dish using the required ingredients, and you could win! Fun, delicious, and easy. My kind of deal indeed. The ingredients in my “basket” were chicken, couscous, salsa, and Sargento Off The Block 4 Cheese Mexican Blend. The Off The Block 4 Cheese Mexican Blend Cheese is seriously one of my favorite types of shredded cheese. It’s SO fresh, flavorful, and creamy. I knew I would like this contest, because, well it centers around cheese. And we all know I love cheese.

- 1 cup Sargento Off the Block 4 Cheese Mexican Blend Shredded Cheese divided
- 16 premade fillo cups
- 2 cups cooked boneless skinless chicken breasts shredded or chopped
- 1 cup salsa
- 1 cup cooked couscous
- sour cream and cilantro for garnish optional
- Combine the couscous, chicken, salsa, and 1/2 cup cheese in a large bowl.
- Fill each fillo cup with about a tablespoon of the chicken mixture
- Top each cup with more shredded cheese
- Place cups on a foil lined baking sheet and set under broiler for about 5 minutes until cheese is melted and bubbly
- Top with sour cream and cilantro and serve immediately.
