Tie a quality beef tenderloin with string.
Season with kosher salt and black peppercorn. Allow to rest in the fridge for 24 hours.
Prepare a sauce with melted butter, thyme, garlic, and shallot.
Strain the sauce and liberally spoon over the tenderloin. Broil the tenderloin.
