Italian inspired Bruschetta Chicken with a creamy, cheesy sauce and topped with fresh and zingy tomatoes. This chicken dish is super comforting and perfect served with your favorite pasta or rice!
Season 4 chicken breasts with salt and pepper on both sides.
In a small bowl, stir together grated parmesan and freshly chopped basil. In another, whisk an egg with water.
Dredge each chicken breast in the egg mixture and then the cheese mixture. Place in a prepared baking dish.
Stir together greek yogurt, balsamic vinegar, olive oil, and garlic.
Pour the balsamic mixture over the chicken breasts and top with diced tomatoes. Cover with foil.
Bake for 30 minutes. Top with whole milk mozzarella and bake for an additional 20 minutes.
