Dredge the chicken in flour and set aside. Heat marsala wine with gelatin and mushrooms. Simmer.
Strain the liquid and return to the skillet. Add chicken broth and simmer until reduced.
Brown the chicken and set aside. Cook the pancetta.
Add mushrooms and cook. Cook shallot and garlic. Stir in the tomato paste.
Add the marsala reduction, sherry, lemon juice, and oregano. Add the chicken back to the sauce and coat. Set aside.
Add fresh parsley and the mushroom mixture. Serve the mushroom sauce over the chicken for the ultimate dinner!
