Instant Pot Pot Roast is the only recipe I need in life! Pot Roast is my absolute favorite winter dishes. There's something about the tender meat, potatoes, carrots, and the sauce that is amazing.
Season the roast with salt, pepper, and paprika. Prepare the Instant Pot.
Sear the roast on both sides in the instant pot. Set aside.
Saute chopped veggies in the Instant Pot. Add garlic and beef broth.
Place the trivet over the sauteed veggies. Place the roast on the trivet and top with herbs and more vegetables.
Pour in the red wine and set to pressure cook.
Remove the top veggies and the roast. Use a immersion blender to blend up the chopped sauteed veggies.
Serve the beef sliced or shredded alongside the vegetables and sauce. Enjoy!
