Instructions
Add the sweet potatoes, water, and salt to the Instant Pot.
2 pounds sweet potatoes, 1 cup water, ½ teaspoon kosher salt
Attach the lid and ensure the valve is in the “sealing” position. Set the Instant Pot to Pressure Cook - Manual for 12 minutes.
Once the Instant Pot has finished cooking, release the pressure manually by switching the valve to the “venting” position - but be careful, it may splatter.
Drain the potatoes and return them to the Instant Pot. Add the half and half and butter.

Use a potato masher or immersion blender to process the potatoes to your desired consistency.
