For the Garlic Parmesan Sweet Potato Fries 2 large sweet potatoes cut into fries 4 tablespoons avocado oil 2 tablespoons all-purpose flour Sea salt and pepper ½ teaspoon paprika 1 garlic clove minced 2 tablespoons parmesan cheese Optional garnish: cilantro and extra parmesan cheese For the Tahini Honey Dressing 3 tablespoons olive oil 3 tablespoons tahini Fresh juice of 1 lime 1 tablespoon Dijon mustard 2 tablespoons honey Salt and pepper
For the Garlic Parmesan Sweet Potato Fries Preheat the oven to 400°F. Line a baking sheet with parchment paper and set aside.
In a large bowl add the sweet potatoes, flour, parmesan cheese, avocado oil, paprika, and garlic. Mix until all the pieces are evenly covered.
2 large sweet potatoes, 4 tablespoons avocado oil, 2 tablespoons all-purpose flour, ½ teaspoon paprika, 2 tablespoons parmesan cheese, 1 garlic clove
Place the sweet potatoes in a single layer on the prepared baking sheet.
Bake the fries 25 minutes. Flip them over and bake for another 25 minutes or until they are slightly golden.
Remove from the oven and let them cool for a few minutes.
Sprinkle with cilantro, salt, pepper, and extra parmesan cheese.
Optional garnish: cilantro and extra parmesan cheese, Sea salt and pepper
For the Tahini Honey Dressing Combine all ingredients in a small bowl and mix until smooth.
3 tablespoons olive oil, 3 tablespoons tahini, Fresh juice of 1 lime, 1 tablespoon Dijon mustard, 2 tablespoons honey, Salt and pepper
Serve and enjoy!
Cook the fries in a single layer on a baking sheet. If they overlap they won't cook evenly. Flip them during cooking.
Make sure that the sweet potato fries are well coated with the oil and seasonings.
Make them gluten-free by using a 1:1 GF flour.
