Add the ground beef to a medium skillet set over medium-high heat. Cook, stirring often, until the meat is browned, about 5 minutes. Once the beef is cooked, drain the grease from the skillet.

Add the garlic powder, paprika, and salt to the beef. Stir to combine and set aside until the mixture is cool enough to handle, about 10 minutes.

In a small bowl, whisk the egg and water together to create an egg wash. Set aside.

In a large bowl, stir the cooled beef, shredded cheese, green onion, and pickles together.

Place the egg roll wrappers on a clean work surface. Add about ¼ cup of filling to the center of each wrapper.

Working one egg roll wrapper at a time, brush the egg wash around the edges of the wrapper to create a seal. Roll the wrapper into an egg roll by folding the bottom point over the filling, then folding the left and right points into the center, and finally rolling it upward to seal. Repeat until all egg rolls are rolled and sealed.
While you assemble the egg rolls, preheat the air fryer to 400°F for 5 minutes.
Lightly spray the air fryer basket with nonstick spray and place as many egg rolls as will fit in the basket, seam-side down.
Brush the tops of the egg rolls with egg wash and sprinkle with sesame seeds and sea salt, if desired.

Cook for 5 minutes. Flip the egg rolls and cook for an additional 5 minutes. Repeat this process until all egg rolls are cooked. Serve warm with dipping sauce of choice.
