If you can't get enough of the bacon and gruyere egg bites at Starbucks you are going to love this copycat recipe! Easy to make, these egg bites are baked on the oven and are perfect for meal prepping or a tasty breakfast on the go.

Ingredients

  • 6 large eggs
  • ¾ cup cottage cheese
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon dried thyme
  • 1 cup shredded gruyere cheese
  • 1 cup fresh spinach chopped
  • 6 slices bacon cooked and chopped

Instructions

  • Preheat oven to 350°F. Spray a 12-count muffin tin with nonstick spray. Set aside.

  • Add the eggs, cottage cheese, baking powder, salt, pepper, and thyme to a blender. Cover and blend for 30 seconds or until smooth.

  • Pour the blended mixture into a large bowl. Stir in the cheese, spinach, and bacon.

  • Pour the mixture into the prepared muffin tin.
