Croissant Breakfast Sandwiches

Croissant Breakfast Sandwiches are the perfect way to kick off your day! Deli ham, swiss cheese and scrambled eggs, layered between a flaky, buttery croissant. Plus they're a great make ahead breakfast!

Ingredients

  • 4 tablespoons unsalted butter room temperature and divided (½ stick)
  • 4 large eggs
  • teaspoon kosher salt
  • teaspoon ground black pepper
  • 4 croissants cut in half lengthwise
  • 12 slices thin-sliced deli ham
  • 4 slices baby swiss cheese

Instructions

  • Preheat oven to 350°F and line a baking sheet with parchment paper. Set aside.

  • Heat 1 tablespoon of the butter in a skillet set over medium heat. Add the eggs and whisk until they are cooked through.

    scrambled eggs in a frying pan.
  • Stir in the salt and pepper then remove from the heat.
    ⅛ teaspoon kosher salt, ⅛ teaspoon ground black pepper
  • Spread some butter on each side of the croissants then fold 3 slices of ham and place them on the bottom side of the croissant.

  • Add some eggs on top then spread it out and add a piece of cheese then top it off with the top half of the croissant.

  • Place the sandwich on the baking tray then make the rest of the sandwiches and bake for 15 minutes.

  • Let the sandwiches cool for 3-4 minutes before serving.

Notes

  • Use English muffins, bagels, or tortillas instead of croissants.
  • Use fried eggs instead of scrambled, or try scrambled tofu!
  • Use cooked bacon or sausage patties in place of the ham, or try deli-sliced turkey!
  • Use your favorite kind of cheese for a totally custom sandwich.
  • Add lettuce, tomatoes, or spinach.
  • Add hot sauce to make them spicy!
Storage: Store croissant breakfast sandwiches in an airtight container in the refrigerator for up to 1 day or in the freezer for up to 6 weeks.
