Apple Cinnamon Bread is a fall staple that you simply can't miss out on! This quick bread recipe is perfectly sweet, warm, and filled with tender baked apples. Cozy up with a slice of this autumnal bread with your morning coffee or as a late night sweet treat!

Ingredients

  • cup brown sugar 142 grams, divided
  • 2 teaspoons ground cinnamon 6 grams, divided
  • 2 apples peeled and diced (about 2 cups)
  • ½ cup granulated sugar 100 grams
  • ½ cup unsalted butter 113 grams, room temperature (1 stick)
  • 1 large egg 50 grams, room temperature
  • ¼ cup unsweetened applesauce 63 grams
  • teaspoons pure vanilla extract 6 grams
  • cups all-purpose flour 180 grams

  • ¼ teaspoon kosher salt
  • ½ cup milk 114 grams

For the Coffee Cake Crumble Topping (Optional)

  • 4 tablespoons unsalted butter 57 grams, melted (½ stick)
  • ½ cup all-purpose flour 60 grams
  • ½ cup brown sugar 107 grams
  • 1 teaspoon ground cinnamon 3 grams
  • ½ teaspoon kosher salt

For the Glaze (Optional)

  • ½ cup powdered sugar 57 grams
  • 2-4 tablespoons milk 28-57 grams

Instructions

  • Preheat oven to 350°F. Spray a 9x5-inch loaf pan with a nonstick spray. Set aside.
  • In a small bowl, mix ⅓ cup brown sugar, 1 teaspoon cinnamon, and the peeled and diced apples together. Set aside.

  • In another bowl, using a hand or stand mixer, beat the granulated sugar and butter until smooth and creamy. Add in the egg and applesauce; mix until combined. Mix in the vanilla. Set aside.

  • In a medium bowl, whisk the flour, baking powder, and salt. Add the dry ingredients into the wet ingredients. Begin to mix the two and gradually add milk; continue mixing until smooth.

  • Pour half of the batter into the prepared loaf pan. Sprinkle half of the remaining brown sugar and half of the remaining cinnamon over the top. Layer half of the cinnamon apples on top. Pour the remaining batter over the apple layer. Sprinkle with the remaining cinnamon apples, the remaining brown sugar and cinnamon. Top with coffee cake crumble topping (see below) if using.

  • Bake for 45-50 minutes, or until a toothpick inserted into the middle comes out clean. Cool for 10 minutes and then remove from pan and cool on a rack.

For the Coffee Cake Crumble Topping

  • Prepare the crumble topping by mixing of the crumble ingredients together with a fork. Once the topping crumbled, sprinkle it evenly over the batter BEFORE baking.

For the Glaze

  • Prepare the glaze by mixing the powdered sugar with 2 tbsp of milk, slowly add more milk and keep mixing until the desired consistency has been reached. Drizzle over the cooled bread AFTER baking.

Notes

  • Try  topping this loaf with the included coffee cake crumble or glaze recipes.
  • Add ½ cup of chopped walnuts or raisins in with the apples.
  • Swap the cinnamon for an equal amount of apple pie spice to kick it up a notch.
  • Be sure to choose a firm apple such as Granny Smith, Honeycrisp, Gala, or Fuji. Softer apples will turn mushy.
  • Dice the apple for a chunkier texture, or pulse it in a food processor for a more uniform texture.
  • Don't forget to grease the baking pan to prevent sticking.
  • Swirl the apple bread with a knife before baking if you'd like less-defined layers.
  • Let the bread cool for at least 10 minutes in the loaf pan before removing; otherwise, it may fall apart.
  • To keep this bread fresher for longer, leave the bread whole and slice of pieces as you'd like to eat them. Slicing the entire loaf at once will cause it to dry out more quickly.
  • Microwave slices for 10-15 seconds to get that fresh-out-of-the-oven feel!

Storage: Store apple cinnamon bread in an airtight container or tightly wrapped in plastic wrap at room temperature for up to 3 days, in the refrigerator for up to 5 days, or in the freezer for up to 3 months.
