Preheat oven to 350°F. Spray a 9x13-inch baking pan with nonstick spray. Set aside.
In a medium bowl, whisk the flour, baking powder, salt, cinnamon, nutmeg, ginger, and baking soda together.

In a separate large bowl, mix the sugar, brown sugar, oil, eggs, and vanilla until thoroughly combined.
1 cup granulated sugar, ¾ cup dark brown sugar, 1 cup vegetable oil, 3 large eggs, 1 teaspoon pure vanilla extract
Add the dry ingredients into the wet and mix until just combined.
Fold in the apples.

Transfer the batter to your prepared dish and smooth into one even layer.
In a medium bowl, stir together the sugar, cinnamon, and melted butter. Sprinkle over the top of the cake.

Bake for 35-45 minutes or until a toothpick inserted into the center comes out with just a few moist crumbs.
Let cool completely before slicing and serving.
