Steal Cut Oatmeal is the perfect healthy and easy breakfast, and this peanut butter and strawberry oatmeal is my FAVORITE steel cut oatmeal recipe! Filled with flavor from crunchy peanuts, strawberry jelly, and fresh cut strawberries, it tastes just like a peanut butter and jelly. BEST BREAKFAST EVER!

Instructions
Bring a pot with the water and oats to a boil over medium-high heat.
2 cups Bob's Red Mill Steel Cut Oatmeal, 4 cups water
Stir in the milk and salt and reduce heat to low. Cook for 16-18 minutes, stirring often, until the oatmeal is the desired consistency.
1 cup whole milk, 1 teaspoon kosher salt
When the oatmeal is just how you want it, turn off the heat. Stir in the peanut butter until fully combined. Stir in the diced strawberries and chopped peanuts.
1 cup creamy peanut butter, 1½ cups diced fresh strawberries, ¼ cup chopped peanuts
Stir in the jelly a little at a time, using a knife or spoon to swirl ribbons with the jelly. I used a squeeze bottle and swirled it around as I incorporated it. You don't want it fully mixed in, the pockets of flavor make it taste more like peanut butter and jelly.
¼ cup strawberry jelly
Serve immediately topped with more sliced strawberries and chopped peanuts, if desired.
Notes
Use skim milk to cut down on calories and fat.
To freeze, pour the oatmeal into the wells of a muffin tin and freeze until solid, about 1-2 hours. Transfer to an airtight container or Ziplock bag to store.
Storage: Store peanut butter and jelly steel cut oatmeal in an airtight container in the refrigerator for up to 4 days or in the freezer for up to 2 months.
