oh the deliciousness of potatoes gratin. basically i love anything with cheese. at restaurants...if i don't know what to order...i just look for entrees including cheese. they are likely to be the best. this dish is AMAZING. i would always beg my mom to make this when we would have my friends over for dinner because it is an absolute crowd pleaser. this creamy and delicious variation on a classic is sure to be a favorite for your family as well.
Stir cream and boursin in heavy saucepan over low-medium heat until cheese melts and mixture is smooth.
pre-cook potatoes in microwave for 4 minutes. Do not cook completely - just par-cook. this will allow the potatoes to cook more quickly.
slice potatoes in thin slices.
Arrange potatoes in baking dish. place one layer of potatoes in dish, then pour 1/2 cheese mixture over potatoes. salt lightly and pepper.
Repeat with one more layer.
Bake until top is golden and potatoes are tender. Usually 45-60 minutes or until the potatoes are fork-tender (you might have to adjust the temperature if browning too quickly).
