Grilled Peaches and Ice Cream is a simple, healthy dessert, perfect for grilling season! Warm peaches, crisscrossed with char lines, smothered in ice cream, and laced with caramel sauce-- the mix of textures and flavors is so good!

Ingredients

  • 4 ripe peaches
  • 1 tablespoon olive oil 13 grams (or olive oil spray)
  • 16 ounces vanilla bean ice cream 454 grams
  • ¼ cup caramel sauce 80 grams, heated
  • ¼ cup chopped nuts 28 grams, optional

Instructions

  • Cut the peaches in half and remove the pits.
    4 ripe peaches
  • Lightly brush or spray the inside of each peach half with olive oil.
    1 tablespoon olive oil
  • Place on grill (medium/medium-high heat), cut side down, and grill for approximately 5 minutes. The peaches should be tender and warmed through, but not burnt.
  • Top with ice cream, hot caramel sauce, and nuts, if desired.
    16 ounces vanilla bean ice cream, ¼ cup chopped nuts, ¼ cup caramel sauce

Notes

  • When buying peaches, make sure they are slightly soft, a dark yellow color and round.
  • Brush the peach halves with olive oil to prevent sticking.
  • Serve with ice cream, warm caramel sauce and chopped nuts--or any combination of those.
  • Plan on at least one peach half per person, but be prepared for seconds!
Storage: Store grilled peaches (without ice cream) in an airtight container in the refrigerator for up to 3 days.
