Add the soaked beans to a large pot. Add in the chicken stock, onion, garlic, salt and pepper, the ketchup, BBQ sauce, brown sugar, tomato paste, and paprika.
Reduce the heat to medium-low, and simmer the beans for about 4 hours, stirring occasionally (you may need to add the additional water during the last part of the cooking process if the beans become too thick), or until the beans are tender and the sauce is rich and thick.
Once the beans are tender, turn off the heat; add in the crisped and chopped bacon, molasses, the maple syrup and the bourbon, and stir to combine.
Taste the sauce and add more salt and pepper if necessary. Top with the cilantro. Serve warm along side your best BBQ dishes!
