Strawberry Shortcake Ice Cream Sandwiches are a simple and sweet dessert fit for any occasion!

Ingredients

  • 12 Walker's Shortbread Cookies
  • 14 ounces strawberry ice cream
  • 2 cups white chocolate chip
  • 1 tablespoon vegetable oil

Instructions

  • Take ice cream out of freezer and allow to melt for 5-10 minutes until a bit soft.
  • Scoop a large scoop into the middle of one cookie and place another cookie on top, creating a sandwich. Press down slowly, to not break the cookies.
  • Place the white chocolate and oil in a microwave safe container and microwave on 50% for 30 seconds. Stir. If not melted, continue to microwave in intervals of 15 seconds, being careful not to burn the chocolate.
  • Take each sandwich and dip half way into the chocolate.
  • Place dipped sandwiches on a parchment or wax paper lined baking sheet and place back in the freezer for 30 minutes before serving.
  • If not eating right away, wrap in parchment paper, then foil, then place in an airtight container for up to one month.
  • Enjoy!
