Tuscan Chicken Soup is something that you can enjoy year-round! This crockpot chicken soup recipe is so delicious, so simple and healthy. This is an easy Tuscan white bean soup to make at home, filled with so many good ingredients!

Ingredients

  • pounds shredded rotisserie chicken fully cooked
  • 4 cups low-sodium chicken broth
  • 2 cups water
  • 3 cloves garlic minced
  • 1 yellow onion diced
  • 3 carrots peeled and diced
  • 3 ribs celery diced
  • 30 ounces Great Northern beans drained and rinsed (2 (15-ounce) cans)
  • 2 bay leaves
  • 4 cups baby spinach
  • Kosher salt and freshly ground black pepper to taste

Instructions

  • Place chicken, garlic, onion, carrots, celery, beans, and bay leaves into a large slow cooker. Season with salt and pepper to taste.

  • Stir in chicken broth and 2 cups water. Stir in spinach. Stir until well combined.

  • Cover and cook on low heat for 7-8 hours or high heat for 3-4 hours.
