1½ pounds shredded rotisserie chicken fully cooked 4 cups low-sodium chicken broth 2 cups water 3 cloves garlic minced 1 yellow onion diced 3 carrots peeled and diced 3 ribs celery diced 30 ounces Great Northern beans drained and rinsed (2 (15-ounce) cans) 2 bay leaves 4 cups baby spinach Kosher salt and freshly ground black pepper to taste
Place chicken, garlic, onion, carrots, celery, beans, and bay leaves into a large slow cooker. Season with salt and pepper to taste.

Stir in chicken broth and 2 cups water. Stir in spinach. Stir until well combined.
