Ingredients

  • 4 large eggs 200 grams
  • 2 cups granulated sugar 400 grams
  • ¾ cup unsalted butter 170 grams, melted (1½ sticks)
  • 1 teaspoon pure vanilla extract 4 grams
  • cups all-purpose flour 180 grams
  • ½ cup unsweetened cocoa powder 42 grams
  • ½ teaspoon baking powder 2 grams
  • ¼ teaspoon kosher salt
  • ½ cup chocolate chips 85 grams

Caramel Cream Cheese Layer

  • 16 ounces low fat cream cheese 454 grams, room temperature (2 bricks)
  • ½ cup granulated sugar 100 grams
  • 2 large eggs 100 grams
  • 3 tablespoons caramel ice cream topping 60 grams

Instructions

  • Preheat oven to 350°F. Line a 9x9-inch baking dish with parchment paper or spray with nonstick spray. Set aside.
  • Using a whisk or hand mixer, beat the eggs, sugar, butter, and vanilla together until completely combined.

  • In a separate bowl, combine the flour, cocoa, baking powder, and salt.

  • Add the flour mixture to the egg mixture and carefully stir until fully combined. Fold in the chocolate chips.

  • Pour the brownie mixture into the prepared baking dish. Smooth out the top and spread the mixture to the edges. Set aside.
  • In a separate bowl, using a hand mixer, beat the cream cheese, sugar, eggs, and caramel topping together for the cream cheese layer.

  • Pour the cream cheese layer over the brownie layer. Use a knife to swirl together the two parts.
  • Bake for 40-44 minutes, or until a toothpick inserted into the middle comes out completely clean.
  • Remove from oven and let cool completely before serving.

Notes

  • Use whatever kind of chocolate chips you like, such as milk, dark, semisweet, or even white!
  • You can use full fat cream cheese for the cream cheese layer.
Storage: Store caramel cream cheese brownies in an airtight container at room temperature for up to 2 days, in the refrigerator for up to 1 week, or in the freezer for up to 3 months.
