Instructions
Place 1 cup of the white chocolate chips in a microwavable bowl.
Add 1 teaspoon cooking oil.
Microwave at 50%, stirring every 30 seconds until the chips are melted.
Dip each pretzel stick 3/4 of the way in the white chocolate.
Place on waxed paper to dry.
Place 1/4 cup white chocolate chips in each of two small bowls.
Add 1/2 teaspoon of oil to each bowl.
Microwave at 50%, stirring every 30 seconds until melted.
Stir food coloring into each bowl, two drops at a time, until you get the desired shade.
Using a spoon, drizzle the colored chocolate over the already-dipped pretzels.
Let dry completely before storing.
These will keep for a couple of weeks if stored in an air-tight container.
Notes
You can also melt the chocolate on the stovetop in a bain-marie (AKA, over a pan of simmering water). Regardless of how you melt the chocolate, don't let any water get in the mixture (you won't like the results!), and be sure to stir often. If you melt the chocolate in the microwave, be sure that you do it in increments so that it doesn't burn.
Let the chocolate completely set before storing the pretzel sticks.
Variations: Try them with milk or dark chocolate and use different colors depending on the occasion. You can also decorate the Chocolate-Covered Pretzel Sticks with sprinkles while they're still wet.
