ASPARAGUS TART WITH GRUYERE CHEESE

- 1 sheet Frozen Puff Pastry thawed but still cool.
- 1 1/2 c Gruyere Cheese shredded.
- 1 lb. Asparagus thin-medium spears if possible. Snap the ends off each spear and then trim even shorter if needed.
- Balsamic Reduction
- Salt & Pepper
- Olive Oil
Lightly flour work surface.
Unfold thawed puff pastry and roll out into a 10-16 inch rectangle.
Slice off a thin edge of the pastry all around. This ensures a more even rising of the dough.
Lightly score the dough 1 inch from the edges and all the way around the rectangle. Be careful not to cut the dough all the way through.
Pierce the dough with a fork several times within the interior rectangle.
Bake for 10-15 minutes or until golden.
Watch closely.
Take out of the oven and let cool.
When ready to prepare and cook
Sprinkle the crust with Gruyere Cheese.
Trim the asparagus to fit the crust crosswise and arrange it on the crust alternating tips and ends. Press down lightly.
Brush the entire rectangle with olive oil including the crust edges.
Season with Salt & Pepper.
Bake at 375 degrees for 20-25 minutes or until spears are tender and cooked through.
Remove from the oven and drizzle with Sweet Balsamic Reduction.
