Cranberry Vanilla Spritzer

Ingredients

  • 2 bags Fresh Cranberries 12 oz. ea. - rinsed
  • 2 1/2 c Water
  • 2 c Sugar
  • 3 Large Oranges - zest and juice
  • 1 t Vanilla Ext or 2 t Vanilla Bean Paste
  • 1/2 t almond ext opt
  • 1 bottle Vanilla Vodka - Sobieski or your favorite
  • 7- Up

Instructions

  • Place cranberries, water and sugar in a stovetop pan.
  • Boil the cranberry mixture just until the cranberries pop.
  • Take off the heat and strain the cranberries over a bowl - reserving the sugar water (which has now turned into a cranberry simple syrup).
  • Place drained cranberries, orange zest and juice from 3 oranges in a blender.
  • Blend until almost smooth.
  • In a large bowl or 1/2 gallon container, mix the cranberry mixture, cranberry simple syrup, vanilla ext. (or vanilla bean paste) and almond ext. and stir until well combined. Refrigerate until ready to serve. This can be made 2-3 days in advance.
  • When ready to serve, pour the following into each ice-filled glass. 2 oz. (or 1/4 c) cranberry mixture, 1/2 oz.(or 1 T) vanilla Vodka¦ stir well, then top with¦ 2 oz. (or 1/4 c) 7-up
