Chicken Satay with Peanut Sauce is a classic Asian dish that's super easy to make at home. Start with a delicious chicken satay marinade, make the chicken skewers, and serve with the easy peanut satay sauce. Add a side of rice and veggies, and you've got the perfect weeknight meal!

Ingredients

For Chicken Satay:

  • 1/2 cup coconut milk
  • 2 tablespoons soy sauce
  • 1/4 cup freshly squeezed lime juice
  • 3 teaspoons Gourmet Garden Stir-in Garlic Paste
  • 1 tablespoon brown sugar
  • 1 teaspoon Gourmet Garden Stir-in Ginger Paste
  • 1 teaspoon Gourmet Garden Lightly Dried Cilantro
  • 1 teaspoon curry powder
  • 1 pound boneless skinless chicken breast tenders or chicken breast cut into strips

For Peanut Sauce:

  • 1/2 cup creamy peanut butter
  • 1 tablespoon lime juice
  • 1 tablespoon vegetable oil
  • 1 teaspoon curry powder
  • 2 teaspoons Gourmet Garden Stir-in Garlic Paste
  • 1/4 cup coconut milk
  • 1 tablespoon sriracha
  • 1/2 teaspoon Gourmet Garden Lightly Dried Cilantro
  • 2 tablespoons brown sugar

Instructions

For Chicken Satay:

  • In a medium sized bowl, whisk together the coconut milk, soy sauce, lime juice, garlic paste, brown sugar, ginger paste, cilantro, and curry powder. Pour into a ziplock bag and add chicken tenders to marinate. Store in the fridge for a minimum of 30 minutes to marinate. While marinating, make peanut sauce (see below).
  • While chicken is marinating, soak wooden skewers in water.
  • Once chicken has marinated for a minimum of 30 minutes, heat a grill or grill pan to medium high heat.
  • Thread each chicken tender onto a wooden skewer.
  • Place on the grill and cook each side for 3-5 minutes or until the chicken is fully cooked. While cooking, you can brush with more marinade if desired.
  • Serve immediately, garnished with Gourmet Garden lightly dried cilantro and with Peanut Sauce.

For Peanut Sauce:

  • Place all ingredients in food processor and blend until fully combined and smooth. If too thick, add a bit more coconut milk.
  • Enjoy!
