Ingredients

  • 1 cup mayonnaise
  • cup apple cider vinegar
  • 2 tablespoons Dijon mustard
  • ¼ teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • ¼ cup granulated sugar
  • 14 ounces tricolor coleslaw mix
  • Chopped fresh parsley optional, for garnish

Instructions

  • In a medium-sized mixing bowl, combine the mayonnaise, vinegar, mustard, salt, pepper, and sugar. Whisk until incorporated and smooth.

  • Pour the slaw mixture into a large bowl and ¾ of the dressing on top. Toss to coat and add additional dressing, if needed. Season to taste with additional salt, pepper, sugar, and/or vinegar, if desired.
