Spray the inside of your crockpot with nonstick spray.
In a large bowl, toss all of the nuts to combine, then add to the crockpot.
2 cups whole raw almonds, 2 cups whole raw pecans
In a small bowl, whisk the egg whites until foamy. Add the sugars, vanilla bean paste, melted butter, and spices. Stir to combine.
2 egg whites, ¾ cup dark brown sugar, ¾ cup granulated sugar, 2 teaspoons vanilla bean paste, 2 tablespoons salted butter, ½ tablespoon ground cinnamon, ½ teaspoon ground ginger, ¼ teaspoon ground nutmeg
Pour the egg/sugar mixture over the nuts in the crockpot. Stir well to coat.
Cover and set to cook on HIGH for 3 hours, stirring every 30 minutes as it caramelizes.
During the last stir, add the water.

Lay out parchment paper then spread cooked spiced nuts in a single layer to cool completely.
