Ingredients

  • 1 cup (220 g) granulated sugar
  • 7 cups (1.6 L) water, divided
  • 2 cups (500 mL) freshly squeezed lemon juice (about 10-12 lemons)
  • 1 ½ cups (245 g) fresh raspberries
  • Lemon slices and extra raspberries for garnish optional

Instructions

  • In a small saucepan stir together the granulated sugar and 1 cup (250 mL) water. Heat over medium-low and continue to stir until the sugar has dissolved, about 3-4 minutes. Set aside to cool.
  • Add the raspberries and ½ cup (125 mL) water to the bowl of a blender or food processor. Blend until smooth. Strain through a fine-mesh sieve, using a spoon to push the mixture through, and add to a large pitcher or jar.
  • Add the lemon juice, remaining 5 ½ cups (1.3 L) water, and cooled sugar mixture to the pitcher. Stir to combine.
  • Serve over ice with extra lemon slices and raspberries for garnish if preferred.

Notes

  • Makes 10 cups Raspberry Lemonade.
  • Don't add ice to the pitcher, add it to the glasses instead. If you add ice too early it will melt and dilute the flavor.
  • Don't be tempted to use bottled lemon juice, it won't be nearly as delicious and it's definitely worth the effort.
