Oven Baked Gnocchi Recipe

All made in one pan, this cheesy baked gnocchi is one comforting and easy weeknight meal. Fresh gnocchi is baked in a cheesy tomato sauce for an effortless dinner everyone will love.

Preheat the oven to 400 degrees.
Heat the olive oil in an ovenproof pan over medium heat. Add the onion and cook until translucent, around 5 minutes.

Add the mushrooms and cook until golden brown, around 2 minutes per side.
1 Pound mushrooms
Add the fresh gnocchi, salt and Italian seasoning and stir to combine, cook for 2 more minutes or until the gnocchi is coated in the olive oil.

Stir in the pasta sauce and remove from heat. Top with the fresh mozzarella slices and take to the oven.

Bake for 25 minutes or until the cheese is fully melted and bubbly. Serve topped with parmesan cheese and cracked fresh pepper.
You can also add fresh spinach and saute with the mushrooms if you want to incorporate some greens.
If you like things spicy, add in a few red chili flakes when you mix in the Italian seasonings.
Leftovers will keep well in the fridge for up to 4 days and can be reheated in the oven at 350F.
