All made in one pan, this cheesy baked gnocchi is one comforting and easy weeknight meal. Fresh gnocchi is baked in a cheesy tomato sauce for an effortless dinner everyone will love.

  • Preheat the oven to 400 degrees.

  • Heat the olive oil in an ovenproof pan over medium heat. Add the onion and cook until translucent, around 5 minutes.

  • Add the mushrooms and cook until golden brown, around 2 minutes per side.

  • Add the fresh gnocchi, salt and Italian seasoning and stir to combine, cook for 2 more minutes or until the gnocchi is coated in the olive oil.

  • Stir in the pasta sauce and remove from heat. Top with the fresh mozzarella slices and take to the oven.

  • Bake for 25 minutes or until the cheese is fully melted and bubbly. Serve topped with parmesan cheese and cracked fresh pepper.

Notes

  • You can also add fresh spinach and saute with the mushrooms if you want to incorporate some greens.
  • If you like things spicy, add in a few red chili flakes when you mix in the Italian seasonings.
  • Leftovers will keep well in the fridge for up to 4 days and can be reheated in the oven at 350F.
