Ingredients

  • 1 tablespoon salted butter 14 grams (⅛ stick)
  • 1 cup Bob's Red Mill Gluten-Free Steel Cut Oats 176 grams, NOT quick-cooking
  • 2 cups water 454 grams
  • ½ cup apple cider 114 grams (NOT apple cider vinegar!!) - SEE NOTE
  • 2 tablespoons brown sugar 27 grams
  • 1 teaspoon ground cinnamon 3 grams
  • 1 large apple peeled, cored, and diced

Optional Garnishes

  • Fresh whipped cream
  • Diced apple
  • Walnuts

Instructions

  • Set your pressure cooker to "saute" and add in butter. Allow butter to melt, spreading it across the bottom of the instant pot.
    1 tablespoon salted butter
  • Add in the oats and stir to coat in the butter. Stir continuously for approximately 2 minutes or until the oats are starting to toast.
1 cup Bob's Red Mill Gluten-Free Steel Cut Oats
  • Pour in the water, cider, brown sugar, cinnamon, and apple. Stir to combine.
2 cups water, ½ cup apple cider, 2 tablespoons brown sugar, 1 teaspoon ground cinnamon, 1 large apple
  • Switch instant pot to "pressure cook" and set for 8 minutes.
  • When it's done cooking, allow to sit closed for 5 minutes, naturally releasing some of the steam. Then press the release and allow the remaining steam to leave the pot.
  • Open the pot (be careful!) and stir to freshen up the oatmeal. Doesn't it smell amazing?!
  • Serve hot topped with fresh whipped cream, more diced apple, and walnuts if desired.
Fresh whipped cream, Walnuts, Diced apple

Notes

  • Apple Cider: If you don't have apple cider, you can skip this and use 2½ cups of water in total.
  • To freeze oatmeal, spoon into individual wells of a muffin tin and freeze until solid, about 2 hours. Transfer to an airtight container or Ziplock bag.
  • Nutritional information does not include optional garnishes.
Storage: Store instant pot apple pie oatmeal in an airtight container in the refrigerator for up to 4 days or in the freezer for up to 2 months.
