- 1 pound Colby cheese shredded or grated
- 4 ounces chopped pimentos including juice (1 jar)
- 2 tablespoons granulated sugar
- 1 tablespoon white vinegar or apple cider vinegar
- 2 tablespoons mayonnaise not Miracle Whip
Mix all ingredients in a medium-size mixing bowl until well combined.

- Adjust the ingredients to your liking. If you want sweeter, just add a little more sugar; if you want a more acidic taste, add more vinegar. If you want a creamier Pimento Cheese Spread, add more mayonnaise.
