Ingredients

  • 1 pound Colby cheese shredded or grated
  • 4 ounces chopped pimentos including juice (1 jar)
  • 2 tablespoons granulated sugar
  • 1 tablespoon white vinegar or apple cider vinegar
  • 2 tablespoons mayonnaise not Miracle Whip

Instructions

  • Mix all ingredients in a medium-size mixing bowl until well combined.
    1 pound Colby cheese, 4 ounces chopped pimentos, 2 tablespoons granulated sugar, 1 tablespoon white vinegar, 2 tablespoons mayonnaise

  • Adjust the ingredients to your liking. If you want sweeter, just add a little more sugar; if you want a more acidic taste, add more vinegar. If you want a creamier Pimento Cheese Spread, add more mayonnaise.
