Steal Cut Oatmeal is the perfect healthy and easy breakfast, and this peanut butter and strawberry oatmeal is my FAVORITE steel cut oatmeal recipe! Filled with flavor from crunchy peanuts, strawberry jelly, and fresh cut strawberries, it tastes just like a peanut butter and jelly. BEST BREAKFAST EVER!

  • 2 cups Bob's Red Mill Steel Cut Oatmeal
  • 4 cups water
  • 1 cup whole milk or skim
  • 1 teaspoon salt
  • 1 cup creamy peanut butter
  • 1/4 cup chopped peanuts
  • 1 1/2 cups freshly diced strawberries
  • 1/4 cup strawberry jelly
  • more peanuts and sliced strawberries for garnish

  • Bring a pot with the water and oats to a boil over medium high heat.
  • Stir in the milk and salt and reduce heat to low. Cook for 16-18 minutes, stirring often, until the oatmeal is the desired consistency.
  • When the oatmeal is just how you want it, turn off the heat. Stir in the peanut butter until fully combined. Stir in the diced strawberries and chopped peanuts.
  • Stir in the jelly a little at a time, using a knife or spoon to swirl ribbons with the jelly. I used a squeeze bottle and swirled it around as I incorporated it. You don't want it fully mixed in, the pockets of flavor make it taste more like peanut butter and jelly.
  • Serve immediately topped with more sliced strawberries and chopped peanuts.
  • Enjoy!
