  • 25 ounces about 1/2 of a quart and a half sized container Vanilla Ice Cream (I used Blue Bunny Vanilla Bean) softened
  • 25 ounces about 1/2 of a quart and a half sized container Chocolate Ice Cream (I used Blue Bunny Chocolate) softened
  • 1 frozen pound cake 10.75 ounces
  • 1/4 cup caramel syrup
  • 1 cup salted peanuts divided
  • 1/4 cup hot fudge


  • Cut the pound cake into three horizontal (long) pieces. You won't use the top, so set it aside to top with strawberries and whipped cream for a treat later.
  • Line a loaf pan with plastic wrap.
  • Start by placing one of the pound cake pieces in the bottom of a loaf pan. Top completely with the chocolate ice cream. Use a spatula to smooth out and spread the slightly softened ice cream.
  • Pour the caramel over the ice cream, leaving a bit of a rim so the caramel doesn't go all the way to the sides.
  • Top the caramel with half of the peanuts.
  • Place the remaining piece of pound cake over the caramel and peanuts (it won't reach all the way to the sides of the ice cream).
  • Top the pound cake with the vanilla ice cream, again smoothing out to form a level layer.
  • Top with hot fudge and more peanuts.
  • Place in the freezer for a minimum of 8 hours before serving.
  • Serve cold and enjoy!
