Pulled Beef Burritos are the perfect way to enjoy summer outside! BBQ has never been better than in a HUGE burrito! These grilled brisket burritos are stuffed with cilantro lime rice, black beans, and tons of cheese. YUM!

Ingredients

  • 2 Large 12 inch flour tortillas
  • 1 package Farm Rich Smokehouse Pulled Beef Brisket prepared according to package instructions
  • 2 cups white rice cooked
  • 1/4 cup light sour cream
  • 2 tablespoons fresh lime juice
  • 1/4 cup fresh cilantro finely chopped
  • 1 15 ounce can black beans, drained and rinsed
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup bbq sauce

Instructions

  • In a medium bowl, combine the rice, sour cream, cilantro, and lime juice. Stir until fully combined and creamy. Set aside.
  • Fill each tortilla with half of the rice, beans, beef, and cheese. Roll like a burrito, bringing in and tucking in the sides to seal.
  • Brush the top of each burrito liberally with bbq sauce.
  • Grill each burrito over medium heat for 5-7 minutes on each side or until the tortilla is crispy and to your liking.
  • Share with friends and enjoy! Each burrito can serve 1-4 people, depending on how hungry you are.
