Ingredients

  • 2/3 c. Evaporated Milk
  • 3 c. sugar
  • 3/4 c. butter 1 1/2 sticks
  • 1 jar Marshmallow Creme - I use Kraft Jet-Puffed - regular size or 2/3rd of large jar.
  • 1 pkg. Ghirardelli Chocolate Chips - I use milk chocolate
  • 1 t. vanilla extract
  • Whole Cashews - opt. - use whatever you like best

Instructions

  • Line small loaf pans with aluminum foil or parchment paper, then spray the liner...or line a mini-cupcake pan with cupcake liners.
  • Combine milk, sugar and butter in a heavy saucepan
  • Bring to a boil and boil until the temperature reaches 234 degrees on a candy thermometer. Approx. 4-5 minutes at a rolling boil.
  • Stir constantly.
  • After the sugar mixture reaches 234 degrees, remove from the heat.
  • Add the Marshmallow Creme, Vanilla and Chocolate Chips.
  • Pour the fudge into the prepared pans and let set.
  • Remove and store in an airtight container.
  • This freezes well.
