Ingredients

For the Mint Simple Syrup:

  • 1 cup superfine sugar (you can also use granulated sugar)
  • 1 cup water
  • 2/3 cup fresh mint leaves (1 ounces)

For the Mojitos:

  • 2 cups good quality white rum (16 ounces)
  • 1 cup fresh lime juice (6-8 limes)
  • 2 cups club soda

Garnish:

  • Fresh lime slices
  • Mint sprigs

Instructions

For the Mint Simple Syrup:

  • In a small saucepan set over medium-high heat, bring sugar, water and mint leaves to simmer (low boil). Stir until the sugar dissolves and then simmer 3 more minutes, without stirring. Pour the simple syrup over a mesh strainer set over a larger bowl. Set the simple syrup in the fridge to cool, about 30 minutes.

For the Mojitos:

  • Once the simple syrup has cooled, pour it into a large pitcher and add the rum and lime juice. Stir and chill at least 1 hour or up to 3 days.

For Serving:

  • When ready to serve, add the club soda and gently stir.
  • Pour into ice-filled glasses and garnish with lime slices and mint leaves (if desired).
