Delicious and easy to make, these bacon wrapped green bean bundles are a must for any Thanksgiving or Christmas table. Sweet and salty, this restaurant quality side is as tasty as it is pretty!
Adjust oven rack to middle-lower position and heat oven to 400°F.
Line a large baking sheet with foil and spray the foil with nonstick spray.
Bring a pot of salted water to boil over high heat. While the water heats, prepare a large bowl of ice water and have a slotted spoon (or spider utensil) ready. Place the beans in the boiling water and cook 1- 3 minutes or until the beans are partially cooked but still have a little snap. Transfer the beans to the ice water to stop the cooking process. After 2 minutes, transfer the cold beans to a paper towel-lined baking sheet to dry. Pat the beans completely dry with paper towels.
Sprinkle the dry beans with kosher salt, freshly ground black pepper and granulated onion.
Place the bacon on a work surface and sprinkle with granulated onion, brown sugar and smoked paprika.
Wrap 6-7 beans with 1/3 slice of the cut bacon (brown sugar-side up). Secure the green bean bundle with a toothpick and place on the foil-lined baking sheet. Repeat the process, leaving 1-2 inches between each bundle. Drizzle the bundles lightly with olive oil.
Cook at 400°F until bacon has crisped, about 15-20 minutes.
Serve immediately and enjoy!
Notes
Take care not to overcook the green beans when you boil them. They just need a couple of minutes.
I used fresh beans, but you can use frozen too. They may require a little longer to boil them, but otherwise the recipe remains the same.
Line a baking sheet with foil so that the green bean bundles are easy to remove and clean up is quicker.
