Coconut Mojitos

Get into the holiday spirit with these delicious coconut mojitos! Easy to make, these lime and coconut cocktails are perfectly refreshing and a great way to get the party started!

Ingredients

  • 6-8 large mint leaves
  • 1 lime wedge 1/4 inch thick
  • 1 teaspoon superfine sugar or 1 teaspoon simple syrup
  • 1 ounce white rum
  • 2 teaspoons coconut cream see notes
  • Club soda enough to fill the glass
  • Fresh mint and cranberries-- optional for holiday garnish

Instructions

  • In a shaker (or glass jar), muddle together the mint leaves, lime wedge, and sugar with a muddler or the end of a wooden spoon. Once the leaves are broken up and the sugar has dissolved, add the rum and coconut cream. Fill the shaker with ice and shake for 30 seconds, or until chilled.
  • Strain into a rocks glass filled with ice. Top with enough club soda to fill the glass.
  • Garnish with fresh mint and cranberries to make a holiday look, if desired. Serve immediately.

Notes

  • Coconut cream is the thick white substance that settles on the top of cans of coconut milk— open the can very gently and it will have the consistency and look of whipped cream.
  • Coconut cream will help give the drink its white color. If you don’t have canned coconut milk, you can substitute coconut water.
  • This recipe is also delicious when made with coconut rum.
  • For a nonalcoholic version, omit the rum.
  • I do not recommend making this drink in advance as the club soda will start to flatten when opened. Try to make the drink as close to your serving time as possible.
