PBJ Overnight Oats Recipe

Start your mornings right with these yummy PBJ overnight oats! Loaded with protein and fiber, these will set you up to face the day!

Ingredients

  • 2 tablespoons crunchy peanut butter 34 grams
  • 2 tablespoons raspberry preserves 43 grams
  • ½ cup rolled oats 50 grams
  • 1 tablespoon chia seeds 15 grams
  • ¾ cup whole milk 170 grams
  • cup nuts about 50 grams, for topping (see note)
  • ½ cup fresh berries about 75 grams, for topping

Instructions

  • Add a layer of peanut butter and a layer of preserves to the bottom of your containers. Spread the layers evenly and fully across the container’s bottom.

  • Top with rolled oats and chia seeds. Pour in milk and gently stir the oats, chia seeds, and milk together above the peanut butter and preserves (see note).
    ½ cup rolled oats, 1 tablespoon chia seeds, ¾ cup whole milk
  • Cover with a wax or plastic wrap and place in the refrigerator. Allow to sit over overnight or at least 2 hours.
  • When ready to eat, top with nuts and fresh berries. Mix together and enjoy!

Notes

  • Nuts: I used a mix of 1 tablespoon peanuts + 1 tablespoon cashews + 1 tablespoon pecans + 1 tablespoon almonds.
  • Note: Alternatively, you can mix the oats, chia seeds, and milk separately, allow to sit for 5 minutes, and then pour the mixture over the peanut butter and preserves. I do it all in a single container for ease and fewer dishes.
  • The recipe below is for one jar, you can easily half the recipe, share it, or enjoy half the next day as it's pretty filling!
Storage: Store PBJ overnight oats in an airtight container in the refrigerator for up to 5 days.
