Pat chicken dry, then cut in half horizontally, creating 2 pieces. Season chicken with salt and pepper.
2-3 boneless skinless chicken breasts, Kosher salt, Black pepper
In a small bowl, whisk together broth, honey, soy sauce, 2 teaspoons sesame oil, lime juice, and garlic. Set aside.

Heat remaining sesame oil in a large skillet set over medium-high heat. Add chicken (in batches if necessary) and sear until golden, about 4 minutes. Flip, reduce heat to medium, and saute until cooked through to ~160 degrees F internally, flipping occasionally to prevent burning.
Add the bowl of sauce ingredients, turn up the heat to medium-high, and simmer for 3-4 minutes, until the sauce reduces and chicken reaches 165 degrees F internally.
Serve with rice, and garnish with green onions and sesame seeds.
