- 24 ounces cremini mushrooms washed and halved or quartered
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon kosher salt
- ½ teaspoon onion powder
- 3 cloves garlic minced
- 1 sprig fresh rosemary chopped
- 2 sprigs fresh thyme chopped
Preheat oven to 425°F.
In a large bowl, whisk together the olive oil, red wine vinegar, salt, onion powder, garlic, rosemary, and thyme.

Add the mushrooms to the bowl and toss to combine.

Roast for 12-15 minutes until the mushrooms are browned and tender.
Sprinkle with additional chopped herbs before serving.

You can use porcini, shiitake, or white button mushrooms instead of cremini.
- You can use melted butter or avocado oil instead of olive oil.
- Try apple cider vinegar or balsamic vinegar for a different flavor.
- Feel free to switch up the herbs!
- Try adding a sprinkle of Parmesan cheese during the last 5 minutes of the roasting time.
