Ingredients

  • ¼ cup unsalted butter (½ stick)
  • ¼ cup all-purpose flour
  • 1 cup ham drippings
  • 1 cup whole milk
  • Kosher salt and freshly ground black pepper to taste
  • Chopped fresh chives optional, for garnish

Instructions

  • Melt the butter in a medium pot set over medium heat. Once melted, whisk in the flour. Cook for 2-3 minutes, wicking constantly until the butter is golden.

  • Slowly add the ham drippings while whisking constantly.

  • Whisk in the milk. Bring the mixture to a simmer and cook for 2-3 minutes until thickened.

  • Add salt and pepper to taste. Top with fresh chives before serving.

Notes

  •  If you don’t have 1 cup of ham drippings, add broth to measure 1 cup.
Storage: Store ham gravy in an airtight container in the refrigerator for up to 3 days or in the freezer for up to 6 months.
