This pasta caprese recipe is made all in one pot! I love an easy one pot recipe, and this quick and tasty pasta is a favorite. It's made with tomatoes, basil, and mozzarella cheese, plus some other tasty ingredients to make it absolutely amazing!

- 16 oz pasta
- 1 can diced tomatoes 15 ounces diced tomato with basil and garlic (or regular). do not drain. pour the liquid into the pot.
- 1 tablespoons chopped garlic i buy it in a jar, you could also buy fresh garlic...use about 4 cloves (this is to taste...you can use more or less, or not at all)
- 1/2 teaspoon red pepper flakes
- 2 teaspoons dried oregano
- 2 tablespoons basil paste this is the first time i've tried this, because the grocery store didn't have fresh basil. its sold in a tube by the fresh spices. it was GREAT. i also love fresh basil, use about a half cup chopped fresh basil
- 2 cups chicken or vegetable broth
- 2 1/2 cups water
- 2 tablespoons extra virgin olive oil
- 1/2 cup shredded asiago adds a bit of creaminess, optional
- 1/2-1 cup fresh mozzarella small cubes (optional)
Place pasta, tomatoes, oregano, basil, garlic, red pepper, broth, water, and olive oil in a large pot (everything except the cheeses)
Cover pot and bring to a boil.
Reduce to a low simmer and keep covered.
cook covered about 10-20 minutes, stirring regularly. the pasta will soak up most of the liquid. watch closely and take off the heat when it has the amount of "sauce" desired.
when it has the consistency you like, stir in the asiago and fresh mozzarella. stir well so that the cheese is evenly distributed.
