Air Fryer Zucchini

Zucchini is one of my all-time favorite vegetables to incorporate into any meal. When I’m looking for a quick, effortless side dish or snack, these air fryer zucchini are my go-to!

  • 1 Air Fryer

Ingredients

  • 4 medium zucchini sliced into 1/4-inch coins
  • 2 tablespoons olive oil
  • 3/4 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon pepper
  • 3 tablespoons grated parmesan
  • chopped fresh parsley

Instructions

  • Preheat the air fryer to 400 degrees. Drizzle the olive oil and sprinkle the salt, garlic powder, onion powder, and pepper over the zucchini. Toss to coat.
    4 medium zucchini, 2 tablespoons olive oil, 3/4 teaspoon salt, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/4 teaspoon pepper
  • Spray the bottom of the air fryer basket with nonstick spray. Place the zucchini in an even layer in the air fryer basket. Sprinkle the grated Parmesan over the top. Do this step in batches if needed. The zucchini should be added in a single layer.
    3 tablespoons grated parmesan
  • Air fry the zucchini for 8 to 10 minutes until tender and edges are crispy.
  • Sprinkle more Parmesan and some chopped fresh parsley over the top before serving.
