Full of flavor and so easy to make, these chicken lettuce wraps are ready to serve in less than 30 minutes. Perfect to serve as an appetizer or low carb dinner.
Optional garnishes: sliced green onionssesame seeds, sesame oil
Instructions
In a large skillet on medium high heat, melt butter and cook yellow onions until they are just softened.
Add the ground chicken into the skillet and cook until brown. Drain any excess fat.
Season chicken with the fish sauce, apple cider vinegar, chili sauce, lemon juice, garlic powder, ginger, and cayenne pepper and stir for 1-2 minutes over medium heat.
Mix in the green onion, water chestnuts, and cashews. Cook for another 3 minutes and then remove from heat.
Prepare the butter lettuce leaves by washing them and then patting them completely dry. Scoop some of the chicken mixture into the center of each lettuce leaf. Garnish with additional green onions, sesame seeds, or a drizzle of sesame oil, optional.
Plate, serve, and enjoy!

Notes
Once the chicken is cooked, be sure to drain any excess fat so that it' not greasy.
Bibb lettuce is best to use for the chicken lettuce wraps, but romaine or even iceberg will work well.
