Ingredients

  • 2 tablespoons salted butter (¼ stick)
  • 1 yellow onion chopped
  • 1 pound ground chicken
  • 2 tablespoons fish sauce
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon chili sauce
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • ½ teaspoon ground ginger
  • ¼ teaspoon cayenne pepper
  • 1 green onion sliced, plus more for garnish
  • ¼ cup chopped water chestnuts
  • ¼ cup chopped cashews
  • 1 head bibb lettuce
  • Sesame seeds optional, for garnish

Instructions

  • In a large skillet set over medium-high heat, melt the butter and sauté the yellow onions until they are just softened.

  • Add the ground chicken into the skillet and cook until browned. Drain any excess fat.

  • Season the chicken with the fish sauce, apple cider vinegar, chili sauce, lemon juice, garlic powder, ginger, and cayenne pepper, and stir for 1-2 minutes over medium heat.

  • Mix in the green onion, water chestnuts, and cashews. Cook for another 3 minutes and then remove from heat.

  • Prepare the bibb lettuce leaves by washing them and then patting them completely dry.

  • Scoop some of the chicken mixture into the center of each lettuce leaf. Garnish with additional green onions and sesame seeds.

Notes

Storage: Store the chicken and lettuce in separate airtight containers in the refrigerator for up to 3 days. Assemble before serving.
