For Mimosas
- 32 ounces orange juice or other fruit juice, such as pomegranate, cranberry, mango, etc.
- 750 milliliters Prosecco or sparkling water
For Bellinis
- 16 ounces frozen sliced peaches (1 bag) or other fruit, such as strawberries, pineapple slices, or blackberries
- 1 tablespoon agave nectar
- 1½ cups water
- 750 milliliters Prosecco or sparkling water
For Mimosas
Pour the fruit juice of your choice into the bottom of a champagne glass, about ¼-½ of the way up. Top with Prosecco or Sparkling Water. Garnish with fruit if desired.

For Bellinis
Place 1 bag of fruit, 1 tablespoon of agave nectar, and 1½ cups of water in a blender and pulse until well combined. Pour into a cup or container and set aside.

To make your bellinis, pour fruit of your choice into the bottom of a champagne glass, about ¼-½ of the way up with fruit. Top with Prosecco or Sparkling Water. Garnish with fruit if desired.

Yield: Each recipe will yield approx 8-9 drinks per bottle of prosecco.
- I used agave nectar to sweeten the purees, but any liquid sweetener will work well.
- Have fun with the garnishes! Lay out your bellini bar with sprigs of fresh herbs and fruits so that people can decorate their own glasses.
