Heat the oil in the Instant Pot, using the Sauté setting.
1 tablespoon olive oil
Once heated, add in the chopped bacon. Cook until the pieces are crispy.

Add in the onion, bell pepper, ¼ teaspoon of salt, pepper, and paprika.

Cook for a few minutes until softened.
Add in the garlic and ham and cook for another 2-3 minutes.

Stir in the black eyed peas.

Pour in the chicken broth. Add in the bay leaves and 1 teaspoon of salt.
4 cups low-sodium chicken broth, 2 bay leaves
Cover the Instant Pot. Press Cancel.
Press the Pressure Cook or Manual button and set the timer for 20 minutes on high pressure.
Let the pressure release naturally for 10 minutes before releasing the pressure valve.
Remove the bay leaves and give everything a stir.
Serve as is or over rice or your favorite grain.
