Sour Cream Noodle Bake is an easy, delicious, comforting, and 100% satisfying weeknight dinner recipe that tastes like lasagna. This one-pan recipe can be on the table in 40 minutes.

Ingredients

  • 12 ounces egg noodles (1 package)
  • cups sour cream
  • 1 cup cottage cheese
  • 2 tablespoons chopped chives or green onion
  • Freshly ground black pepper to taste
  • 1/2 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1 tablespoon olive oil
  • ½ onion chopped
  • 3 cloves garlic minced
  • 1 pound 85% lean ground beef
  • 24 ounces marinara sauce store-bought or homemade (1 jar)
  • 2 cups shredded provolone cheese or mozzarella, divided
  • Chopped fresh parsley optional, for garnish

Instructions

  • Cook the egg noodles according to package directions. Drain, then return to the pot they cooked in.

  • In a bowl, combine the sour cream, cottage cheese, chives, and a couple shakes of black pepper. Stir in the salt and onion powder.

  • Add the sour cream mixture to the noodles and stir. Set aside.
  • Preheat the oven to 350°F. Grease a 9x13-inch baking dish. Set aside.
  • Heat the oil in a large skillet over medium heat.

  • Add in the onion and a sprinkle of salt, and cook for 2-3 minutes until softened.

  • Add in the garlic and cook for another minute.

  • Add in the ground beef and cook for a few minutes until browned.

  • Stir in the marinara sauce.

  • Layer half of the noodles on the bottom of the prepared baking dish.

  • Top with half of the ground beef mixture and half of the shredded cheese.

  • Repeat with another layer of noodles, ground beef, and top with the remaining shredded cheese.

  • Bake for 20 minutes. Garnish with parsley if desired.

Notes

  • You can swap the egg noodles for any short-shaped noodle.
  • You can swap the cottage cheese for ricotta if you prefer.
  • Feel free to add diced veggies, like peppers or mushrooms, in with the onions.
  • You can swap the ground beef for ground turkey, chicken, pork, sausage, meatless crumbles, crumbled tofu, or black beans.
  • Feel free to swap the provolone/mozzarella for sharp cheddar for a less traditional (but still delicious!) casserole.
Storage: Store sour cream noodle bake in an airtight container in the refrigerator for up to 4 days or in the freezer for up to 3 months.
