I recommend using full-fat sour cream for the best flavor, but low-fat will also work.
Use freshly shredded cheese for the freshest taste.
You can swap out the Rotel for diced tomatoes with green chilies, just diced tomatoes, or one can of diced tomatoes and one small can of diced green chilies.
Make this dip spicier by using Hot Rotel and/or pepper jack cheese, or add cayenne pepper or diced jalapeños.
This dip should not be left out at room temperature for more than 2 hours. Place the dip in a bowl set in a larger bowl filled with ice to allow it to sit out for up to 3 hours.
Storage: Store fiesta ranch dip in an airtight container in the refrigerator for up to 3 days.
